Brunch Stan Potatoes

If you didn’t know already, this is a brunch stan blog. I love all things brunch. These rosemary roasted potatoes are no exception. They pair very well with a mimosa…or 3 mimosas haha!

What we’ll need:

1 lb gold creamer potatoes

1 Tbsp sea salt

1/2 Tbsp black pepper

1 Tbsp fresh rosemary

1/2 Tbsp fresh thyme

*A splash (yes a splash) of vegetable oil

*This is what a splash looks like, just enough to coat the potatoes.

I like to add the vegetable oil first because it helps the seasonings stick to the potatoes. I toss the potatoes in the oil, then I add the seasonings and give it one more toss to get everything nice and coated evenly in the spices.

Once the potatoes are nicely oiled up and seasoned thoroughly, pop em in the oven at 425ºF, uncovered, for 30 minutes. I would suggest flipping half way through the cooking time so that we get an even golden brown roast on the potatoes.
