Spicy Tuna Poké Nachos

If you guys follow me on Instagram then you know that I like to eat good all the time. Whether it be food that I’ve cooked in my own kitchen or food from local places here in North Carolina. I’ve recently had poké nachos from a popular spot in Charlotte and had some of my own ideas on how I could make them at home. Here’s my spin on recreating a restaurant experience at home!

1. Let’s season the tuna

I’ve purchased a beautiful tuna steak here. I diced it into small cubes so that it holds onto the marinade better. Also it’s in bite sized pieces that are perfect for nachos. It’s time to season this bad boy up!

1/2 tsp soy sauce

1/4 tsp dark soy sauce

1/4 tsp furikake seasoning (rice seasoning)

1/2 tsp seasoned rice wine vinegar

Let it chill in the fridge while you prepare your other ingredients.

2. Pickled Red onions

This is an ingredient best made the night before. The more they sit, the better they taste. I like to use seasoned rice wine vinegar because it already has the components of a regular pickling liquid. There’s: vinegar, salt, & sugar already right there! Cooking smarter and not harder!

1 cup thinly sliced red onions

1/2 cup of seasoned rice wine vinegar

3. Spicy Aioli

3 Tbsp mayo

1 Tbsp sriracha

1 tsp chili oil

4. Crispy wontons

This part is a lot easier than you would think. I couldn’t find crispy wontons in my grocery store so I fried my own. I cut the square wrappers diagonally to create the triangle shape. I heated 3 cups of peanut oil on medium high heat in a sauce pot. I tested my oil to make sure it was hot enough by dropping a wonton wrapper into the oil. Once it started to bubble I knew the oil was ready. I took them out of the oil as soon as I saw them start to turn slightly golden. I used a sifter to remove the wrappers from the oil. They will continue to cook after taking them out of the oil and they will turn a darker golden shade.

5. Lastly slice a small sized jalapeño very thinly

and it’s time to asssemble!

I used more furikake seasoning on each layer because that’s my preference. Taste your seasoning and make sure it’s to your liking. You might want to add more as well!

It’s Super Bowl season and these would be the perfect edition to your game night eats! Try them out and let me know how they taste by tagging me @CookingWithRoxy on Instagram. I love you all and as always sending lots of moxie your way!
