I had a good friend come over for lunch the other day. She was feeling kind of down. If you follow me on Twitter you’ve heard me say time and time again that food is my love language. It’s also how I show love (the best) for others. What better way to cheer her up than to feed her garlicky, lemony, juicy lamb?
It’s an easy recipe and takes no time at all. Here’s what you’ll need:
3 lbs of lamb chops
1 tbsp of garlic salt
1 tbsp of fresh rosemary (1/2 tbsp if using dried)
1 tbsp of fresh thyme (1/2 tbsp if using dried)
1/2 tbsp of crushed red pepper flakes
Grab a large heavy bottomed skillet, I prefer cast iron, but if you don’t have one that’s perfectly fine use any pan that allows you to get a good sear on the meat.
Add a neutral flavored oil to the pan like vegetable oil to the pan with the stove temperature set to med/high. Once you’re seasoned your lamb liberally CAREFULLY place the lamb into the hot oil.
Now because we want a good sear leave the lamb alone for 1 minute and 30 seconds to get a good crust or good color, then flip to the other side and do the same. Once you’re satisfied with the color and the wellness of the lamb set it on your serving platter to rest.
We still need that hot pan to make the dressing.
You’ll need:
1/2 large lemon
5-6 cloves of minced garlic
3 tablespoons of salted butter
I pour most of the fat from cooking the lamb out of the pan and keep about 2 tbsp. Turn the pan down to medium heat. Add the butter and let it melt down, once it begins to sizzle just slightly add the garlic and let it cook for about 30 seconds (we still want some of the bite from the garlic). After cooking the garlic squeeze in your half a lemon, mix the dressing together in the pan and immediately pour over the lamb. We’re done.
